Dirty Bastard Bratwurst Chili Recipe

One of our most popular taproom deli mainstays is our Dirty Bastard Bratwurst Chili and for good reason. It’s hearty, super-flavorful and just spicy enough to satisfy the heat-lovers while still being approachable. Best part? Now you can recreate this deliciousness at home. Grab our Culinary Director’s recipe below:

Ingredients:

  • 2 lb. raw bratwurst, uncased
  • 2 bottles Dirty Bastard
  • 1 yellow onion, rough dice
  • 1 large green pepper
  • 2 red peppers rough dice
  • 1 ½ cups garbanzo beans, soaked and rinsed
  • 1 ½ cups kidney beans soaked and rinsed
  • 3 cups diced pear tomatoes
  • ¾ cup tomato paste
  • 1 ½ tsp. crushed red pepper
  • 1 ½ tsp. cumin
  • 1 ½ tsp. mild chili powder
  • 1 ½ tsp. hot chili powder

Instructions:

In a large stock pot, brown the bratwurst meat. Next, add onions, green peppers, and red peppers. Sauté onions and peppers until they are soft and onions are translucent. Add one bottle of Dirty Bastard and bring to a boil until reduced by half. Next, add garbanzo beans, kidney beans, spices, diced tomatoes and the other bottle of Dirty Bastard. Bring to a boil and then let simmer for 30 minutes stirring frequently. Add tomato paste while simmering and incorporate fully.  At this point, it’s pretty much good to go. Serve hot, and with any extras or accoutrements that your heart desires – for example, our Solid Gold Cornbread.
