CBS Cream Chocolate Roll with CBS Ganache Recipe

Could CBS get anymore decadent? Yes, yes it could, and this CBS Cream Chocolate Roll is the best way to take this already over-the-top beer even further over the top. Our Culinary Director, Justin Golinski, uses CBS in every element of this cake and we’re definitely not mad about it. Grab the recipe below:

CBS Cream Chocolate Roll with CBS Ganache

Ingredients:

Cake:

  • 6 large egg whites (room temperature)
  • ½ cup powdered sugar
  • 1 Tbls. all-purpose flour
  • 6 large egg yolks
  • 1 Tbls. pure vanilla extract
  • ½ cup powdered sugar
  • 6 ounces semi-sweet chocolate chips
  • 3 Tbls. CBS

Filling:

  • 1 ½ cups heavy whipping cream
  • ½ cup powdered sugar
  • ¼ cup unsweetened cocoa powder
  • 1 Tbls. CBS

Ganache:

  • ½ cup heavy whipping cream
  • ¼ cup CBS
  • 6 oz. semi-sweet chocolate chips 

Directions:

Preheat oven to 350 degrees. Grease a 10×15 inch baking sheet. Fit waxed paper or parchment paper into baking sheet. Grease again, and dust with flour. In a small bowl, beat egg whites until soft peaks form. Slowly add ½ cup powdered sugar and flour, until stiff peaks form. Set aside.

In a large mixing bowl, beat egg yolks, vanilla extract, and ½ cup powdered sugar until thick like pancake batter, and lighter in color.

In a small saucepan, melt chocolate chips with CBS, being careful to not let it boil or burn. Bring to a smooth consistency.

Stir CBS chocolate into egg yolk mixture until fully incorporated. Fold in egg white mixture.

Spread into prepared baking sheet, and bake for 15-20 minutes. Cool for 15 minutes.

Beat together all filling ingredients, until stiff peaks form.

Turn the cooled cake onto a damp tea towel. Carefully remove paper. Spread CBS filling evenly over cake. Pull up short end, and begin to roll, using the towel to help roll cake. Wrap tightly and freeze or refrigerate.

Combine ganache ingredients, and slowly warm and stir until consistent. Set aside.

Before serving, cut into 1-2 inch slices and drizzle with CBS ganache. Serve chilled. Enjoy!
